Roasted sweet potato bar recipe
Ingredients:
3 or 4 medium sweet potatoes, roasted
2 cups rolled oats
3/4 cup dried apricots, chopped OR rasines
1/2 cup almond butter
1/2 to 1 stick butter, melted
3 tbsp. brown sugar
2 tsp. nutmeg
Optional
1/2 cup chocolate chips, 55%
1/2 cup chopped walnuts
Roast the sweet potatoes. 375 degrees for 90 minutes. Let cool, remove skin and then mash. (If I have the time, I will put these in the fridge overnight. See note on resistant starch below)
Mix all ingredients thoroughly in a large bowl.
Line a rimmed baking tray (I use a large glass one) with parchment paper
Press and flatten sweet potato mixture into tray
Bake at 350 for 30 minutes, let cool
Notes:
These are great for either dessert or taking on adventures as an alternative to store bought energy bars. For the “dessert” version I add the chocolate chips, and serve with vanilla ice cream. For the “adventure bar” version I leave out the chips (so they don't get messy with melted chocolate) and wrap them up for easy transport.
The quantities are all estimated, make adjustments on taste.
Experiment with other ingredients.
If you want a little caramelized sugar on the bottom, bake the bars a few minutes longer at 375 but keep an eye on them.
Leave out the butter for a vegan version, they will still taste good but they will be more “loose”
