Roasted sweet potato bar recipe

Ingredients:

3 or 4 medium sweet potatoes, roasted

2 cups rolled oats

3/4 cup dried apricots, chopped OR rasines 

1/2 cup almond butter

1/2 to 1 stick butter, melted

3 tbsp. brown sugar

2 tsp. nutmeg

Optional

1/2 cup chocolate chips, 55%

1/2 cup chopped walnuts 


  1. Roast the sweet potatoes.  375 degrees for 90 minutes.  Let cool, remove skin and then mash.  (If I have the time, I will put these in the fridge overnight.  See note on resistant starch below)

  2. Mix all ingredients thoroughly in a large bowl.

  3. Line a rimmed baking tray (I use a large glass one) with parchment paper

  4. Press and flatten sweet potato mixture into tray

  5. Bake at 350 for 30 minutes, let cool

Notes:

  • These are great for either dessert or taking on adventures as an alternative to store bought energy bars.  For the “dessert” version I add the chocolate chips, and serve with vanilla ice cream.  For the “adventure bar” version I leave out the chips (so they don't get messy with melted chocolate) and wrap them up for easy transport.

  • The quantities are all estimated, make adjustments on taste.

  • Experiment with other ingredients. 

  • If you want a little caramelized sugar on the bottom, bake the bars a few minutes longer at 375 but keep an eye on them.

  • Leave out the butter for a vegan version, they will still taste good but they will be more “loose”
